For the past ten years I have been educating people on how to use food as medicine. I completely believe that we should head to food first and foremost before we do anything else for our health or to reduce illnesses.
Food has the power to heal and that is often forgotten.
Most of the time I teach people don’t want to loose their comfort foods. I completely understand that.
My mom makes amazing cookies, there are many memories associated with them; the only problem is there is gluten and dairy in them both things my son and I can not tolerate.
So, that has inspired me to use food in another manner, often with sweets I really feel empowered to create easy raw recipes.
Raw foods are amazing because the antioxidants and nutrients are at their height, making the foods even more potent than they would be cooked.
Here is my raw chocolate chip cookie recipe. They freeze amazingly and will quench any sweet tooth. If you do not do nuts, any seeds will work just as easily in this recipe. Feel free to swap any item.

1 cup cashews
3 tablespoons peanut butter
1 tablespoon coconut oil
1/2 cup dates
3 tablespoons chia seeds
1/4 cup shredded coconut
Put cashews in food processor and grind into a flour. Add coconut. Heat peanut butter, dates, and coconut oil so they are softened. Add into food processor and blend together. If too dry add a little almond, rice, coconut milk. Once blended, make balls, flatten with palm of hand and sprinkle cacao and/or dark chocolate nibs on top. Place in freezer. Will keep at least a week.
Cashews: Copper, manganese, tryptophan, magnesium, phosphorus. Heart healthy, helps in building bones, prevent gallstones, aids in energy production.
Peanut butter: Folate, vitamin B3, protein, manganese. Heart healthy, source of antioxidants, protect against colon cancer, can help prevent gallstones and age related cognitive decline.
Coconut oil: anti fungal, helps with blood sugar control, aids thyroid function, source of healthy saturated fat.
Dates: calcium, sulphur, potassium. Help fight constipation, help in controlling weight gain, and are heart healthy.
Chia seeds: fiber, protein, calcium, omega 3. Assists in weight loss, heart healthy, may help fight against depression.
Cacao: antioxidants, vitamins A, B1,B2,B3,C and E. Help increase levels of serotonin, and mood elevation.
